Method 1.Lightly grease and line lamington tray with paper. Line base of tray with Lattice biscuits. 2.Combine custard powder, caster sugar and cream in saucepan, heat over medium temp and stir until sugar has dissolved. 3.Add milk to saucepan and continue stirring until custard is thick and smooth. Remove from heat and add vanilla essence. 4.Dissolve gelatine in hot water and add to custard. Cover with plastic wrap and allow to cool. 5.Spoon custard over biscuit base and then place remaining Lattice biscuits on top. Place in fridge for one hour or until custard is set. 6.If icing is required, mix icing sugar, butter and passionfruit together, spread over top and place back in fridge to set.
Ingredients * 2 packets of Lattice biscuits * 2/3 cup of custard powder * 1/2 cup of caster sugar * 600 grams of light cream * 3 cups of milk * 2 teaspoons of vanilla essence * 2 tablespoons of gelatine * 1/2 cup of hot water
